Chef Scott Walton and Slagel Farms Kick-Off First Class on Tuesday, July 13

With Chicago’s farmer’s markets now in full swing, let Chef Scott Walton of MARKETHOUSE Restaurant and Bar share his best tips and demo his favorite recipes at his new complimentary cooking series, “Heartland 101,” held Tuesday, July 13, 20 and 27 from 6 to 7 p.m. Classes, held in the restaurant, are limited to 40 guests. A long-time patron of Chicagoland farmers, Chef Walton will advise guests on how to select the best meat, produce, and seafood along with offering some of his favorite tips and recipes. The Heartland 101 classes are complimentary to attend and will include complimentary wine and beer tastings and bites from MARKETHOUSE’s dinner menu. For guests who stay on for dinner, MARKETHOUSE will offer 30% off select bottles of wine featured during the class. The Heartland 101 series will feature:

  • Pork: A Family Business (Tuesday, July 13, 6 to 7 p.m.): Join Chef Walton and Farmer Louis John Slagel of Slagel Family Farm—which has provided all-natural quality meats to Chicago and central Illinois for generations—for a discussion and cooking demonstration on what to ask and look for when buying pork and other meats at the farmer’s market, grocery store, or local butcher shop. Learn creative techniques and a new pork recipe for your next summer soiree.
  • Taste of our Garden (Tuesday, July 20, 6 to 7 p.m.): Visit MARKETHOUSE’s rooftop garden with Chef Walton and learn how to prepare fresh salads with herbs from the garden. While Chef Walton assembles aromatic summer salads with local produce, he will also share his tips and best practices for creating a garden.
  • Spotlight on Sustainable Seafood (Tuesday, July 27, 6 to 7 p.m.): Chef Walton will focus on sustainable salmon, tuna and other fish while sharing tips on the best types of fish to buy, when and where to purchase it fish along with his most popular recipes.
